Kiln’s tasting menu was locally focused, refined, and thoughtful without ever feeling precious. Each course offered something new to discover. Standout moments included beautifully prepared halibut and abalone during the seafood courses, while the duck was a highlight of the evening’s meat course. Even the bread and butter—a dish so often overlooked—was simple, perfect, and memorable.
The wine pairings were equally impressive. They guided us around the world while remaining approachable and engaging, introducing many of us to bottles and regions we may not have explored otherwise.
Yet for all the discussion about food, wine, and service, the subject that kept resurfacing throughout the evening was something entirely different.
The playlist.
It was, to put it simply, a banger.
Great Kanye. Deep hip-hop cuts. Songs many of us grew up with. Tracks that instantly sparked conversation and recognition around the table.
For some members of our team, this was their first fine dining experience. The music subtly changed the room. It removed any sense that fine dining was reserved for someone else. The playlist communicated something important: you belong here.
You know this song.
That feeling—of being welcomed into an experience without needing a manual or a certain level of expertise—is something we think about often at Tailors’ Keep. The best hospitality doesn't make people feel intimidated by quality. It invites them into it.
Kiln excels at exactly that.
The result is an experience that feels thoughtful, approachable, and deeply memorable. The kind of experience that lingers long after the final course has been cleared from the table.
Much like a well-made suit, it is the sum of a hundred small decisions executed with care.
